Misty Copeland’s Fresh Baked Tilapia

 

We are so excited to share this clean and fresh recipe just in time for summer.

“I bake so many different types of fish and have so many different recipes, but this one I was introduced to actually not that long ago, and it became one of Jackson's favorites immediately.

I was with my sister in law, who's my husband's brother's wife, in Paris, and they made this beautiful white fish with, you know, tomatoes and tomato sauce and all these herbs. And I kind of took it and made it my own.”—Misty

 
Ingredients

  • Fresh Tilapia filets
    (you can also use frozen and thaw per the packaging instructions)

    1-2 tablespoons of Olive Oil

    1 cup chopped tomatoes (if you are serving bigger filets make sure there are enough tomatoes to lightly cover the fish. The tomatoes are what’s going to create a delicious sauce for the fish)

    2 garlic cloves minced or hopped

    1 tablespoon of fresh Thyme, you can substitute 3/4 teaspoon of ground Thyme.

    1 tablespoon of fresh Rosemary, you can substitute 3/4 teaspoon of dried Rosemary

    Lemon juice, to taste

    Salt and Pepper to taste

Directions

Preheat oven to 400 degrees.

Arrange fish in a baking dish.

Add in drizzles of olive oil. fresh chopped tomatoes, chopped garlic, thyme, rosemary and a little bit of lemon.

Then I kind of just blend it all together, salt and pepper.

Bake it for about 20 minutes at 400.

I love to serve it with a roasted vegetables.

 

#MichelesKitchenNotes I’m a fish girl especially on Fridays but this recipe sounds so good I may try it any/every night of the week. I’m excited to play around with it too and add in some fresh finds from the local roadside stand in my neighborhood to change and enhance the flavor from “thyme to thyme”.
